GREEK TASKEBAP / STEWED MEAT
Greek Recipe Ingredients:
* 1 kg / 2 lb meat in squares
* One sliced onion
* 1 litre/1 quart of liquid tomato paste for cooking
* Two spoons of sugar
* 1/2 cup olive oil
* Salt, pepper and oregano seasoning
GREEK RECIPE INSTRUCTIONS
Chop the onion and brown in a pot with the oil. Add the meat and brown the sides. Sprinkle salt and pepper. Add the sugar, cover with the tomato juice and add the same amount of water. Let cook for an hour or more until the meat is soft (in a pressure cooker it takes 20 minutes). Serve with rice or fries/chips.

* About 1 kilo or two pounds of fish, half small, half large, any fish will do must be gutted and scaled(get the cheap ones!)

Greek Recipe INSTRUCTIONS
Put the smaller fish with enough water to cover them to boil. Add the olive oil, the sliced onions and the sliced tomatoes. After boiling them for about 1 hour, strain them through a strainer, making sure the meat of fish is well pressed. This is then returned to the heat and now you put the larger pieces of fish in it. Add water to cover. After about 1/2 hour, remove it from the fire, and slowly take out each large fish and remove the bones, head and fins. Return to the soup and the Greek recipe is ready to serve hot...nice ! Enjoy it !

Greek Recipe Ingredients:
* 1 cup chopped onions
* 1 cup Olive Oil
* 6 cups water
* 1/2 cup grated cheese (Emmenthal is fine)
* 4 slices white bread
* 1 teaspoon cornstarch
* Salt and pepper for the taste
GREEK RECIPE INSTRUCTIONS
Fry the onion in the oil until slightly brown. Add the water (should be boiled), pepper, salt and let it simmer at low fire for about 5-10 minutes. Mix the cornstarch with some water, and pour it into the soup. Stir for a few minutes and the soup will thicken slightly. Toast the slices of bread and put them on plates. Pour the soup on top and sprinkle with the grated cheese. The Greek recipe of soup is ready to serve...enjoy it!

Ingredients:
* 500 grams (1/2 quart) of Greek yoghurt (or natural full, dairy yoghurt)
* Three garlic cloves
* 1/2 cup of olive oil
* 1/2 sliced cucumber
INSTRUCTIONS
Put the yoghurt in a bowl. Put the garlic through a garlic press and using the edge of a knife, spread the garlic coming our of the press on the yoghurt. Take the cucumber and peal the skin. Slice it thinly, either with a knife or using a salad slicer. Mix the ingredients with a mixer (or a fork) and slowly add the oil. The oil will be absorbed, and when it is done, the tzazki is ready. Serve with a spoon and a few olives spread on the top. Tzaziki is eaten with plenty of french bread. The Greek recipe of Tazaziki is ready to serve...enjoy it !

Garlic mushrooms with yoghurt
Try this amazing Greek recipe...nice taste ! the Garlic mushrooms with yoghurt - (Skordata manitaria me yiaourti)
INGREDIENTS
* 75 grams butter
* 750 grams fresh small mushrooms
* 1/2 tspn lemon juice
* 4 garlic cloves, crushed
* 1 spoon finely chopped parsley
* Salt
* Pepper
* 2 spoons yoghurt (for each plate)
METHOD
Saute all ingredients until baked, except of the yoghurt. Serve beside each plate, as an appetizer, together with two spoons of yoghurt. The Greek recipe is ready to serve...nice one ! Enjoy it !

Kokoretsi
Kokoretsi ...try this traditional Greek recipe...a must try !
INGREDIENTS :
* Guts of lamb. You might need guts from more than one lamb. Ask for 2 hearts, 2 spleen, liver and 1 lungs, 2 testicles
* Bowels (intestines) of lamb. At least 4 are required for a medium size kokoretsi
* oregano
* Salt
* Pepper
* Some olive oil
INSTRUCTIONS :
Wash the guts very thoroughly and cut them in small pieces. Be careful not to cut them in too small pieces because you will no be able to skewer them. Wash the bowels very carefully and try to clean them from inside. Leave them in a washbowl and keep the ends of each bowel in one side in order to be able to seperate them.
Prepare the souvla (iron stick). Start skewering the guts in the iron stick until all are passed to the iron stick. Pin one end of the first bowel in the one side of the souvla and wind the intestine around the skewer. If the bowel reaches its end tie it with the end of the next bowel and continue to wind until all bowels are wrapped and no guts are visible (you should only see the bowels along the souvla). Season with salt, pepper and oregano.
Prepare the fire and roast on all sides until guts are brown and crispy. Check that "kokoretsi" is ready and remove from fire. Cut the kokoretsi in cylinders of 5 cm wide in order to remove it from the souvla in pieces. Put in platter, oil the kokoretsi pieces, season with extra salt, pepper and oregano and the Greek recipe is ready to serve...enjoy it !

INGREDIENTS
* 1 barley rusk
* fresh 1 tomato
* 1 spoon kopanisti cheese
* Oragano or capers
* olive oil
METHOD
Take the rusk and wet it with water in order to make it softer.
Strain it and then spread the kopanisti cheese on its surface.
Grate some fresh tomato on top and then sprinkle some olive oil.
Sprinkle oragano or capers on top and the Greek recipe is ready to serve. Enjoy it !
